Ginger beer Recipe

okie dokey. it didn’t even occur to me that some of you would actually want to try this yourself but here is the recipe:

~750 g of ginger (two big chunks) food processor these
1 cinnamon stick
8-10 cloves (little flower minty things, not garlic)
2 lemons juice these, maybe a little zest from them OR
2 lemons chopped. You will read about only taking the zest and the juice as the pith is bitter but i like bitter as do all beer drinkers……..think about it.
2kg raw sugar (4.4 pounds give or take)
1 sachet champagne yeast <- any yeast will work, but the alcohol tolerance among other things is determined by the yeast. bread yeast will taste like cardboard.

Throw ginger in food processor and juice lemons. Boil everything up for 1 hour (not yeast as they still need to be alive :P ) in 3-4 L(1 gallon) water. Cool in ice water then filter into fermenter, top up to 15 L (4 gallons) with cold water.

while all of this is boiling and such take a small cup and put some sugar (like a spoonful) and cool/room temp water in it. empty your packet of yeast into this cup and stir it up. this is to wake up some sleepy and hungry yeasts.

once you put all the boiled stuff in the fermenter and topped off with water, pitch the yeast. which is a fancy way of saying pour them in. giving the wort (the liquid in the fermenter) a brief stir. and seal it up with the lid and airlock.

this should ferment for about 2-3 weeks total. then comes the bottling. which i’m not going to get into because it’s highly specific on what tools you have. a brew supply shop can help with any lingering questions and advice.

oh, one last thing: this can be alcoholic or not. if you want non alcoholic, just let it brew in the bucket till it starts to bubble the airlock, then bottle and refrigerate. it will carbonate the brew by itself so open the cap once a day so as not to explode your bottles.

No comic, hell no getting out of bed. I am sooooo food poisoned. And inbetween hazy vomiting and slipping in and out of conciousness… I have a few moments of grim lucidity. This is one of those moments.

So while I wanted to draw slinky crying on the toilet holding a vomit bag, alas I cannot. Sorry hope I feel better soon

why i’m not updating this week.

12/26 my new feral cat is loud. she went into heat the day after xmas. the noise, smell, and entire feeling around her was one of unexplainable annoyance. this is my 2nd cat to go into heat, and the first one nearly drove me insane. so anyways, i made some appointments, and now gotta wait for a few days of “MEEEEEEEEEEEOOOOOOOOOOOOOOOOOWWW” and finally it will stop… right? yeah.
right.
12/30 so she’s spayed now and it’s time to take her home thinking she’ll act like my other cat did; be groggy, stumble around, sleep a lot… nope. this cat was in pain, and wanted me to feel pain too. so i take her back to get another pain shot, and some meds. i haven’t slept in what feels like a week. i caught a few hours per night, but not usually more than 3.

just dropped waffles off at the airport and i know you’d love some comics, right? well, no. i’m gonna sleep like a disney princess. i’ll make a new year’s comic like i do every year. see you with non-delirious eyes tomorrow.
